When Muffins Attack

I woke up Sunday with a craving for Blueberry Muffins. And, MIRACLE OF ALL MIRACLES, we had every ingredient on hand.

Despite having an entire cabinet of awesome cookbooks, more often than not, we look online and on our phones for a lot of recipes.

A while back I downloaded Mark Bittman‘s How to Cook Everything iPhone app ($4.99, though I think it was on sale when I got it.) My old roomie Abigail had the cookbook when we lived together–before either of us even had a cell phone. Also when Destiny’s Child had four members.

I love the way he explains recipes. He basically gives you an outline of the principles of what you’re making and then offers several variations to spice it up. So, for muffins, he says you need flour, butter, sugar, baking powder, salt, milk, egg. Basic Muffin 101. Then, if you want to go the Blueberry route, he suggests you swap some of the flour for cornmeal. Add some cinnamon (next time, I’ll add less) and lemon zest (will add more). Pour in some extra milk if you need it. No pressure.

It’s that whole “Give a man a muffin, he’ll brunch for a day. Teach a man to make muffins, he’ll brunch for life.” concept.

See, I made a well in the dry ingredients and poured my wet ingredients right in the center. That was fun.

I also used the swank bakeware we got for our wedding. Williams-Sonoma Goldtouch. I’ve only had the cheap-o stuff before and wow, what a difference. I didn’t even use paper liners (didn’t have any) and they cleaned up easily and beautifully.

Bittman gives very little direction on how much butter to slather on after they’re baked. Better use a little extra, just to be on the safe side.

    They were awesome! But I do agree with your tweaks for next time. Although the cinnamon was interesting, I’d use less. And I love the lemon/blueberry combo, so more lemon next time, sil vous plait.
